Happy fall, y’all!
What better way to celebrate my favorite season than with a comfort food recipe that’s sure to satisfy on these cooler days. (And check out the YouTube video I filmed of me making this by clicking the link here!)
Beef stew is the simple idea of combining beef and vegetables together, creating a well-rounded and complete meal. I only wish it didn’t take so long to make…So with this recipe, it doesn’t!
This is one of those recipes that is super forgiving! All ingredients and measurements are approximate and can be slightly adjusted to fit your needs.
Ingredients:
• 1 lb beef stew meat chunks
• 1 lb potatoes
• 1 lb carrots
• 1 medium/large onion
• 2 tbsp minced garlic
• 1 can reduced sodium chicken broth (or any other type of broth)
• 1 large can tomato/pasta sauce
• 1 tbsp olive oil
• 3 tbsp Worsteshire sauce
• 2 tbsp flour (or corn starch) and 2 tbsp water
• 1 cup water
• salt + pepper to taste
• 1 tsp each parsley, oregano, and basil (or Italian seasoning blend)
Directions:
1. Add olive oil to the Instant Pot and press the “Saute” button. Brown thawed beef on all sides. Season with salt, pepper, and your Italian seasonings of choice.
2. Once browned, add the Worcestershire sauce, chicken broth, tomato sauce, water, garlic, potatoes, carrots, and onions to the pot. Stir well.
3. Secure the lid on the Instant Pot and turn the valve to “Sealing.” Press the “Pressure Cook” button and set the timer for 35 minutes.
4. Mix flour and water together to create thickener. Set aside.
5. Once timer goes off, turn the valve to “Venting” to release all of the steam.
6. When all steam has been released, remove the lid and add thickener. Stir well.
7. Serve immediately and store leftovers in the refrigerator or freezer.
