A Healthy Side Dish: Broccoli Salad

I’m all for simple, easy recipes that taste good and are healthy(ish)! So when I saw broccoli on sale this week, I knew I had to make broccoli salad.

Although this is nothing new, it has always been a favorite at any get-together I’ve attended. For one thing, it’s customizable. Add cheese for a more savory flavor, or cranberries for a sweeter taste. Also, it’s semi-healthy when the rest of the holiday spread is far from it.

This is usually more delicious made the day before and left in the refrigerator overnight, so make it ahead to save yourself some time!

Here’s what you’ll need:

12 oz chopped raw broccoli florets

1/2 cup chopped red onion

1/8 cup shelled sunflower seeds

2 tbsp bacon pieces

2 tbsp white vinegar

1/8 cup mayonnaise

1/8 cup sugar

Mix broccoli, onions, sunflower seeds, and bacon together in a bowl. In a separate bowl, mix vinegar, mayonnaise, and sugar. Combine all ingredients and serve. Store in refrigerator for up to five days.
